Food delivery is a technology-driven reinvention of the traditional takeout culture. With the emergence of platform-based services like Uber Eats and Demaecan, even independently owned restaurants without delivery infrastructure can now participate in the delivery market.

The market expanded rapidly during the COVID-19 pandemic starting in 2020, with Japan's food delivery market reaching approximately 800 billion yen by 2023. Platforms leverage technologies such as real-time GPS tracking, AI-powered route optimization, and dynamic pricing to highly optimize the entire experience from order placement to delivery completion.

Food delivery pricing follows a three-layer structure: "item price + delivery fee + service fee." Note that menu prices on apps are often set 10-30% higher than in-store prices, as restaurants pass on platform commission fees to customers.

Tips for reducing costs include taking advantage of first-order coupons, spreading delivery fees across bulk orders, and subscribing to delivery passes like Uber One. Additionally, delivery fees spike during rainy weather and peak lunch/dinner hours due to surge pricing, so simply shifting your order timing can save you several hundred yen.

For restaurants, food delivery represents a new revenue channel, but platform commissions - typically 30-35% of sales - pose a significant challenge to profitability. To mitigate this commission burden, new business models have emerged, including the use of ghost kitchens and the development of delivery-exclusive menus.
